Recipe: Lemony Kale Salad
Ingredients:
1 bunch kale, stems removed and leaves thinly sliced
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 garlic clove, minced
Salt and pepper to taste
1/4 cup grated Parmesan cheese
1/4 cup toasted pine nuts
Optional: sliced strawberries or dried cranberries for sweetness
Instructions:
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper to make the dressing.
In a large mixing bowl, add the sliced kale. Pour the dressing over the kale and massage it into the leaves with your hands for a few minutes until the kale starts to soften.
Let the kale sit for about 10 minutes to allow the flavors to meld.
Add the grated Parmesan cheese and toasted pine nuts to the kale and toss to combine.
Optional: Garnish the salad with sliced strawberries or dried cranberries for added sweetness.
